Xmas must do and don'ts

We've been to Disney many times, but this will be our first trip at Xmas with our 5 year old and 11 year. We will only be there 6 days, so I'm thinking of skipping Animal Kingdom entirely, but if we do what will we miss seeing at Xmas? What do you consider to be the must do's at Xmas or what could we skip? We are staying at Beach Club Villas. Thanks!
