Next trip is Xmas time. While I know the mine coaster won't be open I was hoping someone could tell me if the rest will be done.

As far as I understand Little Mermaid and Be Our Guest should open 'round +/- October this year (someone correct me if I'm wrong), so that should put You in the clear for Your Xmas-trip!
