It’s going to be difficult to advise you without giving us a number you are targeting on your budget. Value resorts are the less costly resorts across property but still pricey now. Price is only one thing to consider. Are you willing to accept value rooms which might be noisier and have less room? You can fit 3 in a value resort room but they are smaller in size. Look over at the moderates you might decide the locations, the theming or other factors are worth the cost to you. The transportation may also be less guest friendly depending on where you stay at value resorts.
If budgets are the deciding factor then even though you want to stay in Disney, staying off site which will be cheaper may be a better option for you.

It really depends on how much you plan to be in the room and if there are two of you are totally cool sharing a bed. If you just need a crash pad then go for a value. I will say that there are not many benefits to staying onsite as there used to be so really consider a nice off-site hotel. You might also be able to afford the swan or dolphin.

And it depends on when. For example, we had reservations for last December at the Hilton Grand Vacations Tuscany Village (we ended up not going for non-covid health reasons) for a 1 bedroom with sofa sleeper condo for $135/night, on a deal that required advance reservations 90 days ahead.

If you want to be on property dont forget about Swan and Dolphin we really enjoyed our stay there over Thanksgiving. Yeah its not a Disney themed Hotel but it was quite nice. If you want a Disney Moderate vote from me its POR French Quarter. Dont forget to see Yee Ha Bob!

Check out some of the hotels at Disney springs and bonnet creek as well. You can get a lot of bang for your buck compared to Disney resorts propper
Agree some good values at the DS resort area. We stayed in a Disney preferred hotel right outside the DS. It was a Spring Hill suites. Big room but I can’t remember if you got early access.
