I know that is late compared to Wisconsin and MN....but for Brick NJ that's actually earlier than usual.
We used to get a week off in November. The week that aligned with the Teacher's Convention (Thurs. & Fri)Wow! That is early!

Any long thin eggplant will do In a pinch regular eggplant will work but the texture is slightly off, you'd have to be a food snob to noticeI've never seen Chinese eggplant in a supermarket though. Maybe I miss it but I would think it would be nearby the regular eggplant.

Our local one closed about 4 years ago as well. Two other restaurants have tried to make a run in the old location and failed quickly. I think that location had a lot to do with it. It was on the opposite side of the Walmart Parking lot, hidden away in the trees completely our of sight and mind. I used to drive right past it at least 3 times a week and each time I would think to myself why don't I remember that place exists. I think it was a "place to be" at one point, but people find other things to occupy their time.Our only one closed four years ago. They are just getting around to putting something else new in place of it.
Of course, the town I grew up in has an entire mini strip mall abandoned except for a Chinese restaurant. The main tenant was Blockbuster. And before that Almacs (supermarket) but that strip mall got knocked down. This is why I hate when they build new buildings when they have entire perfectly good empty ones. (cough....the new Disney festival center...cough)
The Superman building in Providence has been empty for 12 years but needs public money apparently to renovate it (don't get me started on that)

I will eat just about any vegetable except raw tomatoes, or aubergines in any recognizable form. I have a keto eggplant parm that I make you may actually eat. It starts with a homemade sauce. Then slicing the eggplants very thing, dipping them in beaten eggs then almond flour baking until soft. In your case I'd peel before slicing. Lots of cheese (df for the boys due to allergies) and layering everything before baking. If peeled, you really can't tell what they were. My one ds who should have a gazillion food aversions only has a couple raw tomatoes being one but he'll eat them by the serving bowl if I marinate themI will eat just about any vegetable except raw tomatoes, or aubergines in any recognizable form.
