When to make reservations

Hotel make as soon as possible. If there are any discounts to apply (if you are staying in a Disney Resort) you can apply them as the become available on your existing reservation.
Airfare is hit or miss. Shop around. Look at Expedia or Orbitz and see what they're rates are and THEN book through the airline's site (expedia has service charges). Keep in mind, Southwest and JetBlue do not code-share and don't show up in Expedia or Orbitz so if you live in or near a Southwest or JetBlue city, you will have to hit their individual site to see their prices.
Best bet is to keep checking and set a "no more than" fare (i.e. I set my no more than @ $200 R/T after taxes from PHL to MCO based on prior flying experience and research of fares). If you can find a fare well under the no more than price, book it and don't check another airline website again!
Just keep in mind, certain days of travel (Fri, Sat, Mon) are going to be the days that the fares are highest, the others with Wed being the best of the lower fare flights. If your dates are flexible, try to stick with leaving on a Wed and at least a Sat night stayover to get the best fares.

Thanks for the info! We arent sure how many people are goin (between 2-4) would that mess up opur reservation?

If you live in the eastern part of the US, there is a new airline, Independence Air, which offers one-way fares as low as $49.00! The airline is based out of Dulles airport (Washington DC area) and is expanding rapidly. They have smaller, but nicely refurbished jets (leather seats) and have ordered 25 new Airbus aircraft. They plan to start flying into MCO sometime in Nov, so check out their website to see if they fly out of an airport near you.
