Magic Kingdom: Pirates is my #1, followed closely by Small World, Carousel of Progress, and Haunted Mansion.
EPCOT: Spaceship Earth, then followed closely by Soarin' and Test Track (since I can no longer pick Maelstrom )
Hollywood Studios: Midway Mania + Movie Ride
Animal Kingdom: Everest

MK: The Peoplemover, The Carousel of Progress, the Hall of Presidents (I like riding things we don't have at Disneyland in California), and the Haunted Mansion

AK: Festival of the Lion King, Everest, though I wish Everest were 3 times taller, and the two walk-through jungle treks

Studios: The Great Movie Ride

EPCOT: eating at World Showcase, The Lands boat ride, The American Adventure, the French & Chinese movies, watching other guests drink Beverly at the free Coke place

For me it is a toss up between Soarin and Spaceship Earth. I'd have to lean toward SSE though because it's longer and doesn't require the wait time that Soarin does. I especially love the top of SSE and the view of earth. I am constantly hoping for the ride to break down just when I get to that part, but, it never has.
