What to eat, late arrival?

All of these options sound great. I most like the idea of a late dinner at DS or Antony's Pizza. BTW, we fly into OSI because of Allegiant Air, great rates if you can fly on their schedule.

Is the parking situation fixed at disney springs? Haven't driven their since April 2014 and I remember it being an absolute NIGHTMARE due to all the construction going on.

we usually drive to the Walmart in kissimme to grab a few things for the room,they have a subway so we eat there and get to resort and take a leisurely stroll around the quite peaceful resort

If you'll be doing all that traveling that day and won't get into the resort until about 8pm, my suggestion is merely to use the food court and grab something quick.

If for any reason you get delayed and still want to start the trip with a "Disney" meal, the Quick Service at Grand Floridian (Gasparilla Island Grill) is open 24 hours a day so you could always drive over there, grab a bite and get a glimpse of the castle from across the lake!

Since you are getting in so late and still want to have time for dinner, have you thought about having groceries delivered to your resort so you don't have to make an additional stop at Walmart? Garden Grocer and Orlando Grocery Express are two options; they both have a $40 minimum and a $14 delivery charge, so you will have to decide if that is worth it to you. However, the resort will hold it for you when they deliver it.

If you are flying into Orlando International, and taking the Magical express, you may want to eat at the airport. Not sure what will be open at that hour, but there are lots of places to eat there. I can only speak of the All Star Sports. The food court there is open late. That may be an option.
