What are the "Must Try" items at Food and Wine Fest this year?

The short rib from South Korea is good, but I live with a Koren roommate who has made me better so I suppose I have been spoiled. He says that the red sauce they put on it, doesn't do it justice. I still loved the Food & Wine version though. The cucumber kimchi is overrated. From what I understand kimchi means it has been "pickeled" in a sense. So it tasted like pickles to me.

There's not much from the ocean that I'm not a fan of. But I was surprised I liked those clams so much. I'm generally not a fan of clams unless they are in a soup.

I live in smack in the middle of one of the largest Korean populations on the East Coast. On any given night during the summer one of my neighbors is outside grilling short ribs. If not, I have my choice of what has to be 2 dozen Korean restaurants in a 4 mile radius. Just like you, I have had better, but EPCOT's were still good.

Kimchi is sort of a generic term. It is sort of like saying "salad". Kimchi is pickled 'stuff' - Diakon, Napa Cabbage, Horsetail Radish, etc. It is usually hot, but it does come in varying degrees.

I was surprised and happy to see that EPCOT's version had a bit of a kick to it. I have had melt your fillings hot kimchi - its not that strong, but it does have a bite. I think they used cucumber because that is at least approachable to most people, as opposed to serving, say, burdock kimchi.

there are so many good things to try, and some not so good things also. but as far as "must try" is concerned- lettuce wraps with roast pork and kimchi slaw from South Korea. chili from the U.S.A. and ravioli from Italy, well, you KNOW what thats going to taste like. its alot of fun to try the different items you might not have had before! I also liked the short ribs and mashed potatoes in France.

The USA offering has beans in it, ergo they are not serving chili. But I digress. (whatever you want to call it was indeed tasty)
