What’s the fait of the Biergarten?

The best solution I have seen for buffets is what was done at a wedding reception I attended recently. Rather than each DISH / ITEM having a serving piece, each INDIVIDUAL GUEST was handed a plastic serving piece and a plate by the caterer. At the end of the buffet line the serving piece was discarded so nobody was touching serving pieces that had been handled by someone else. Also, everyone wore masks as they went through the line to avoid breathing on the food.
Why anybody wants to eat buffets where it is impossible to cook good food is a mystery.

So, if you scooped up the garlic mash potatoes, you then put the utensil, in the green beans, rice, and gravy, too?

I'm a fan of breakfast buffets, but most standard American breakfast food is hard to screw up. Especially when they have an omelet station, but that's not even necessary. That's not to say there isn't some really great, more elaborate breakfast food you can't get on a buffet (or at least shouldn't), but they work pretty well as a way to kick off the day with a nice variety. In Disney terms, I'd certainly rather spend the $30 or whatever it is to have the breakfast buffet at Boma than spend the same $30 for a breakfast somewhere like Be Our Guest.

I don't typically eat enough to really justify the price, but I like being able to have a very small amount of a large variety of things at breakfast.

I'm completely with you on lunch or dinner buffets, though.

I can’t even look at most southern food. Just not my cup of tea. Outside of Fried Chicken which can be amazing.

Smoked turkey or beef brisket at a good barbecue place is heavenly.

Don't really get the love for smoked pulled pork, though. It's basically just a sauce delivery device whereas good smoked turkey and brisket doesn't need sauce.

Thats the problem for us. We just dont like buffet type service.

We dont like the idea of people, whose hands have been God knows where, grabbing utensils that you have to grab next. Even before COVID. Just yuck.

We also dont like the value, or lack thereof, with buffets. They are so expensive that there is a tendency to overindulge in order to feel like you didn't throw money away.

We went to Biergarten once, years ago. It was fun. We enjoyed it. But as a buffet, we won't be back.

My thoughts exactly on buffets. The $$ is so high that there is definitely a tendency for my to overindulge (or perhaps so many people tend to overindulge that Disney increases the price). I loved the entertainment and atmosphere the one time we ate at Biergarten, but the food is not up my alley and I can't justify that price.

I really hadn't thought about the sanitary aspects of buffets as much as I should have before, but after this year that has definitely highlighted that concern.

No, at this reception there were no "dippable" items, just "pickable" items such as sliced smoked beef tenderloin, sliced smoked pork tenderloin, prawns, chicken fingers, grilled asparagus, bacon wrapped green bean bundles, cheese cubes, fruit, and several other items that I don't remember.

My armchair redesign of biergarten would be to turn the top level into traditional table service then make the lower levels bar/lounge style with small bites and larger beer selection with picnic tables for group seating

I have never seen good scrambled eggs served off of any steam table anywhere.

There's a huge difference between good and serviceable. I've had serviceable scrambled eggs many times on breakfast buffets. The ones at Boma are fine.

But, as I said, I'm usually only getting a tiny amount of them anyways (if at all... I will sometimes skip the scrambled eggs entirely). I like getting a little of everything on a breakfast buffet.
