That's true, they definitely are great and we've had some very good experiences at Spoodles, The Brown Derby, Beaches and cream, California Grill, etc. Unfortunately AK lacks any quality restaurants.
My dad does no butter/cheese thing too, just for dietary purposes. All you have to do, is ask for nothing on the breadsticks. They're really nice about it usually.
Also, the Flame Tree BBQ has fruit salads, as well as french fries and onion rings. As well as fruit in Harambe. Pizzafari also has PBandJ.
Oh, and at the Tusker house, they have a Vegetable Sandwich marinated vegetables on a focaccia bread with hummus spread, served with fresh fruit
Outside of the Animal Kingdom, well RIGHT next too before you enter the kingdom, is Rainforest Cafe. They have

Planet Earth Pasta - Italian sausage and penne pasta lightly tossed with olive oil, garlic, Roma tomatoes in marinara sauce and topped with fresh Mozzarella. $12.99
Rasta Pasta - Grilled chicken, penne pasta, pesto, broccoli, red peppers and spinach, tossed with Alfredo sauce. $15.99
Hong Kong Stir Fry - Portabello mushrooms, carrots, broccoli, peas, red and green peppers in a Hoisin ginger sauce: with chicken $15.99; with shrimp $17.99; with shrimp and chicken $18.99
As well as just regular salads, and they may have soups that day for you.
Not real sure what you can and cannot eat, but I'm sure that the chefs will take out what you do not eat.
What you need to remember, is that Animal Kingdom doesn't have a lot for the even the meat eater. It might be better to eat outside the park.
