Like Mike and Crush are really conversing ... kinda.

No, not like that.

Mike and Crush are live voice actors and the animation matches their talking in real time (through either puppeting or a camera pointed at their face).

There is a Mickey that can do something like that with a voice modulator, but that Mickey only makes rare appearances. The stage Mickeys lip sync their dialogue while they move their fingers to operate their mouth and eyelids.

Town Hall Mickey is voiced by an operator who has a sophisticated voice tree (probably on a touch screen) that allows for the most anticipated questions and responses that are voiced at the touch of a button. The one in the costume is likely signaled in an earpiece as to what they're about to say and they do the miming. Some people have reported very in depth responses such as Mickey asking where you're from and in response to "New Jersey" says "What exit?". Or speaking the child's name or switching languages. Some have reported only the most basic canned responses. Probably a B-mode operator.

I believe Mickey, and all of his friends, can do longer set when they work in an indoor air conditioned environment. I will reach out to my friends in the know on this and ask specifically about meet and greets like Town square.

Typical outdoor set is about 20 minutes. Now typical in door set, air conditioned enviroment, is about 45 minutes. Also apparently in an indoor environment the face characters can go on stage for well over an hour. Wow.
