I'd say it comes down to the standard buffet vs table service quality dilemma for me. Most TS have better-prepared dishes and presentation, where buffets of course, have a larger variety, and a 'fun' element of going to pick your dishes multiple times.
Tusker House isn't an average Disney buffet, being a 'lite' version of the amazing Boma at AKL. We really enjoyed our lunch time there. The atmosphere is open and relaxing, and the characters are an extra bonus no matter what.
We're planning on revisiting Yak & Yeti this year since it's been a while and we're specifically eyeing some items there. So unless there's something on the Yak & Yeti menu that really speaks to you, I'd go with Tusker House.
There's a mix of both, and it's not too Americanized, especially for being a park restaurant as opposed to AKL. Of course, Boma is miles better, but for the sake of time and convenience, I would not hesitate to give it a try at all.

Good point... I'll be visiting AK twice in April... One time with my DH (which we'll go to Y&Y b/c we have a boma and sanna reservation.. and then I'm going to take the first timer to tusker lunch and ROLIMHO it depends on what you're looking for in a meal. Tusker is starch heaven with mid continent Africa inspired foods, while Yak and Yeti is Southern/Southeastern Asia inspired foods. Typically Tusker is noisy and Yak quiet.
There's also the question of how much you're looking to spend. Those Disney buffets ain't cheap.
You if to get a late breakfast time would the buffet switch over to lunch while there, I noticed there was very little time between the two.
