Trip in 2021 worth it for us?

We had pretty much the same situation as you. Cancelled two trips, I'm fully vaccinated, kids ds that don't get crazy about meet and greets and generally enjoy the rides, pools, etc. We went last month and it was AMAZING. we are going again in April. For us it was nice not having the crazy crowds. We enjoy the fireworks, from a distance, sometimes, but wasn't a big deal to us. The dining options were more than enought gh for us, even though a few favorites are still closed. It made usbtey some new places that are now new favorites lol. The trade off was totally worth it to us with low crowds. We walked on every ride (yes, even peter pan) except for mine train. I don't expect April to be as spectacular but I would say if it's even half as awesome, it would be worth it.
That's great to hear! I really don't like crowds, so I'm ok with missing some stuff if it means lower crowds. Actually, I went with my in-laws before we had kids and I was fine with those crowds, but I went in and just enjoyed the experience overall. I think I don't like crowds now because I know my kids don't like waiting, so it all just stresses me out! I've been watching the app over this last week and even with Presidents Day, the ride times seem very manageable.

If you think you might only go one more time with your kids (ever) then I'd say skip this year and go in 2022. I say the same thing to people with babies. Yes, I think Disney with babies (or during COVID) is "worth it" if you're going to go other times and get a fuller experience, but if it's closer to a once-in-a-lifetime thing, it's not the ideal time to go and I would wait.

The assumption you’re making there is that they will reset the dial and be “back to normal” by
Then.

I’m not talking about covid concerns...I’m talking new policies and prices from that idiot chapek that will further drive the whole point of going down

And keep in mind the posted times aren't always accurate. We found that usually they were shorter. For example mine train would say 60 minutes but it was never more than 40/45. Litter mermaid will almost always say 10 but it's just a matter of making it through the queue. I always worked really hard to plan precovid trips around low crowd times and have always been lucky so I'm hoping April is still low but I do see the crowds increasing as more people are vaccinated and comfortable with the lower risk and frankly, most of us are tired of it all. We hadn't eaten out at a restaurant since this started last year. Kona cafe was our first indoor dining experience since covid started.
