After the park is clear, the BGM does shut off (or at the very least, the volume is automatically turned lower than is audible).

If you watch the Behind the scenes of the MK shows. The park closes to guests but it doesnt really shut down overnight as it is cleaned, painted, etc. I think the music is turned down.

I had a friend that lost his keys in the Magic Kingdom during a trip a few years back. It was during the summer when the parks are already open late and then there were EMH until 3 a.m. They had him wait on Main Street after hours while the cleaning crews were out. He said it was kinda creepy being alone on Main Street with all the lights and music still going. They eventually found his keys at BTM at around 5 a.m.

Actually, on our last trip to Epcot (around New Years Eve), we hopped in a 45-minute line to Soarin' about 20 minutes before EMH ended... I wanna say they ended at 1 am that night, but I'm not really sure. When we finally left Soarin (about half an hour after EMH officially ended), the park was completely deserted, so we started our walk back through World Showcase to get back to the Boardwalk. We thought there was something... off... about World Showcase, but couldn't put our finger on it... until we realized all the music in the park was off. The loudest noises were the freezing cold breezes in the trees (also weird), the water splashing in the lagoon, and the occasional Cast Member sweeping. Very creepy experience.

We've stayed twice at a DVC Villa overlooking California Adventure out in Anaheim.
On both stays, I noticed from my balcony that the music in the park started playing about 2 hours before the gates opened.

Hmmm. Id like to be in one of the parks in the middle of the night with nobody there

Nobody there? Ha. There's so many people working around the park it's far from empty. While true, it's nothing like during the day with guests, the park is still quite busy with planting, painting, rehearsals, etc.
