So my wife says I outdid myself tonight. I completely made this up as I was going along. (I make dinner on Monday, Tuesday and Thursdays, she cooks on Friday, Saturday and Sunday and we usually do takeout on Wednesdays.)
I had some chicken thighs I sauteed in olive oil to crisp up the skin, then I took them out of the pan and added bell peppers, onions, garlic and mushrooms and sauteed them in the drippings and to deglaze the pan. Then I added diced tomatoes, tomato paste, Penzey's Italian herbs and added the chicken back and let it simmer for about an hour. Smelled great and tasted great. Was supposed to be served with penne pasta, but was out of that, so I used spaghetti noodles instead and it worked just fine. Good stuff for something I just made up on the fly.
