Eggplant parmesan tonight
That looks better and I'm sure tastes better than my local pizza place that sells eggplant dinner for $18.

I love pizza rolls. I've started making mine in the air fryer and they turn out great. If I want to make them a little more "gourmet" I spray them with cooking spray and put a light sprinkling of garlic pepper on them and it gives them a little boost.

Made a big salad with blue cheese crumbles, hearts of palm, bell peppers, olives, tomatoes etc. etc. Topped it with some Green Godess dressing and served it up with these two items (not my pictures) from Trader Joe's. Everything was delicious

I like the timbales, they remind me of artichoke dip! The Timbales are great and also remind me of Artichoke dip. I kind of deconstructed my timbales and topped the Gnocci alla Romana with it. It was delicious!
