Nice choice! I know @D Hindley recently was at Hong Kong Disneyland - was there any construction progress on these additions when you were there?
There was no visible construction in Hong Kong. It’s too humid there to do any work. The only evidence at all was the temporary wall blocking their former Autopia.

Meanwhile, construction at both of Tokyo’s parks was obvious. A huge crane in DisneySea visible from everywhere was making Soarin’. At Tokyo Disneyland, the huge Beauty and the Beast miniland plot (former Autopia too) was 100% visible from Toontown and Tomorrowland. They’d even dozed away the berm, revealing many non-Disney hotels. An eyesore now, but it will be amazing when done I’m sure.

Tokyo Disneyland construction seen from onboard Gadget’s Go Coaster. Wouldn’t have ridden that otherwise.

Yes this question can also extend to california adventure if you feel like something like this would fit better there.
Space restaurant technology?!

How about something different, like riding elevator “diving bells” deep below the ocean’s surface for some fine seafood dining onboard the Nautilus. Place this alongside the Submarine Voyage on the Fantasyland side, and retheme the subs MK-style to a different (better) Nemo.

I would make a restaurant in Tomorrowland (2nd floor of innoventions) that would would be themed to time travel where you can look out onto Disneyland from different eras.

So every 25 minutes or so the scene fades out from 1955, to 1970, then 1985, then 2000, and you see Disneyland change and evolve

Oh did I just come up with my One Sentence Project for this round ???o_O

I’d have it in the Innoventions building and have E.P.C.O.T. theme after Disney’s city that never was.
