Well I can certainly offer some thoughts -- though building an entire park from scratch in a week will be tough! (Unless, you already have land ideas and such)

Sheraton. The Hilton was none refundable/cancelabl and the Sheraton was for cheaper.

I've only stayed in a Sheraton one time, but it was basically the same as Hilton haha. Awesome!

Not yet. I’m gonna wait a few days/maybe a few weeks. Right now I’m reserving the stuff I can pay for later and cancel later

That's smart, flights are my least favorite thing to book because they can fluctuate so much and I always feel like I'm going to not get it at the lowest available price.
