The cost of adding days to your ticket

Our family of 4 is planning a 5 night 4 day stay on resort this November. I noticed that it only costs $20 or so per person to add day 5+. If we show up on our first day at the parks and like the weather, crowds, and such and decide we want to upgrade our tickets to 5 or 6 days, can we do that at the resort for the lower cost? or do we have to pay the full days gate price at that point? Is the same true for park hopper? If we are in the park the first couple of days and think "these crowds are terrible, let's go somewhere else?" Can we add park hopper then?

Magic kingdom closes for the christmas party 2 of the days we are there at 6:00 PM, so I'm wondering if crowds will be lower those days, and then we can park hop over to something like Epcot and enjoy the late night extra magic hours. I want to lock in our tickets for the fast passes, but I'm not sure I want to do a park hopper yet. Our kids are 11 and 13.

Yes, you can add both additional days as well as Hopper to the tickets once you're in the parks. You'd just pay the price difference.
Just make sure to add the extra day(s) before the end of the final day on your tickets. If you use Day 4 and then the morning of Day 5 you decide you want to add another day you'd be out of luck.

Party days do tend to have lower crowds through the day. Reports suggest you can do more in the fewer hours on those days than you can in the longer hours on non-party days.

The downside is of course you can’t stay for the fireworks. But if you were adding hoppers, you could hop over to MK on another (non- party) day to see them.

Park hoppers used to be front loaded. With all the price jumps I don't know if that's still the case but if it is, well worth adding the extra days. Well, my opinion only. Got much more out of the trip and if you didn't make the last day it didn't hurt. You can also use the unused days at a later time. That's what we just did. We were there the week before Christmas and had a day left. Just used it in April.

A Disney CM or a TA who “specialises” in Disney, or just a TA who books Disney packages?

The agency may have some kind of exclusive package that they sell; some of those cannot be upgraded on site. But otherwise the agent was almost certainly incorrect.

Maybe try @Kingdom Konsultant and see what they say? Several of their agents are active on here.

I spoke with a Disney rep on their chat system who said that as long as you have 1 day left on your reservation, you can add additional days. I don't know how true that is since we tried to do that the last time we were there (it was the morning of our last day before we scanned into the park) and they wouldn't let us add additional days.

You can definitely add days/upgrade to your ticket when there if you purchased through Disney. As nickys said, there might be exceptions for bulk travel companies buying the tickets at a deal. I was able to upgrade my daughter to an AP on our last strip since she was planning on going back with a friend within a year.
