Almost all restaurants on property will offer some kind of Thanksgiving meal. You can most likely expect The Diamond Horseshoe on the MK to open and serve a Thanksgiving meal. In past years Thanksgiving meal was also served @ the Contemporary in the conference center. So if you want to be adventurous you cold try to get in someplace that normally would not be open to most guests
Remember the Thanksgiving week is one of the big weeks and crowds will reach a 10 out of 10. Make you reservations as soon as your 180 mark hits.
For recommendations:
I find that Liberty Tree is not the place to go. First of all you can get their Thanksgiving fare any day of the year and to be honest it is not that good.
If you want to stay in MK that day (which will be insanely packed) try Tony's. We ate their on a Thanksgiving day a few years ago and was pleasantly impressed. You can have a traditional meal and someone in your party can have a steak or spaghetti.
Over @ Epcot you could try Biergarten. Entertainment and they also add in Thanksgiving fare to the buffet.

A few places do not serve a traditional Thanksgiving meal would be
Boma in AKL
O'Hana in the Poly
Teppan Edo in Epcot
Another option is retire to you resort for your meal. Most if not all resort restaurants will offer a T-day meal.
Watch the boards for the next few weeks and read the WDW news postings. You will see what is open and what they serve.
