For starters, no one seems to be able to decide on the name of the show. I've heard everything from simply "Stunt Show Spectacular" to the french named "Moteurs... Action!" The name works with the show though -because it's hosted by the directors who are filming the stunts for a movie, and thus, would say something along the lines of "Motors... Action!" to start the scene. Although here in the States I don't know that we'd call them "Motors" but whatever.
Secondly, the Indy cast is not going anywhere - unless some of them have put in for trasfers to the car show. Disney/MGM Studios upper management is actually very happy having two stunt shows - and as they say it, it is the only park where you can see shows featuring every type of stunt, from the human stunts in Indiana Jones Epic Stunt Spectacular, to the wide variety of vehicular stunts in Moteurs... Action! Stunt Show Spectacular.
The show itself is decent. I say decent, but honestly I am not one for stunt shows - so for me to call one "decent" is actually giving it a fair amount of credit. I hate the Indiana Jones Epic Stunt Spectacular. There was some parts of Moteurs performance that was actually artisitc in the way they move the vehicles around, and it commands respect, even if you couldn't care less about cars or stunts (like me).
As for the speculation on the set - it will not be changing. It's even featured in the concept art on site at New York Street. The purpose of the show is that they are filming the stunts for a movie in production. It's a James Bond-esque spy flick, and throughout the show while they perform the stunts there ARE camera men that film them - and during the breaks in acts, they use that footage to piece it with "what they shot already;" the parts of the movie without the stunts that just involve the actors setting up the scenes. So it progresses to the finished product by the end. As such, in order to use the pre-filmed scenes, the set would have to match. Now the one thing that I will say is that though the set must match for the film, the set itself has very little to do with the show. It really is just a backdrop to block out the rest of the park and keep you focused on the action at hand, for the most part.
