There are a lot of places that sell really good grilled dishes. I havent found a BBQ place that I like. Im spoiled though, My wife is from texas so I have had some if the best in the country. I also smoke ribs and such when I BBQ at the house. Not to say the BBQ places there are not good, just not my flavor.
If you or anyone have a hankering for real good Texas style BBQ while at Disney and have access to transportation it is well worth the short trip to either winter garden or winter park to go to 4 Rivers Smokehouse. If we didn't usually have a rental car anyway I'd insist we get one just so we could make a trip there. It's that good! It puts anything that Disney classify as BBQ to shame (not that that is really all that difficult given the shoe leather they dish out ;) )

In the mid-west
BBQ = sauce
Grilled = direct heat (hot and fast - steaks)
Smoked = indirect heat (low and slow - ribs)
Smoked and grilled done outside (or open flame in restaurant) with charcoals, wood or gas.

I haven't found a great sauce in WDW, but Whispering Canyon has some good smoked meats and Yachtsman has some great grilled steaks (Le Cellier steaks were too salty for me - almost like they brined them so they could make the trip over on the May Flower)

You're probably right. We get our favorite true slow smoked ribs at a place called Smoke N Bones on Martha's VIneyard. Yum, now I'm craving them!
You just can't beat real BBQ, I don't even care if its Memphis, Carolina, Texas or Georgia- I love it all. I'm not even southern but to me its just comfort food through and through. I really wish Disney did it right somewhere on property or contracted out a 3rd party to do it. I've heard that the bbq booth at the flower and garden festival is real smoked bbq, I'm disappointed that we won't be making a trip in May this year. BBQ doesn't really exist over here :(

I agree that there isn't a lot in the way of real BBQ at WDW. That being said I like the closest things to it at Whispering Canyon Cafe or Trails End. A BBQ Slaw dog at Casey's is never turned down as well. The Mojo Bones are pretty tasty at Rainforest Cafe. I hear great things about Flame Tree and intend to check it out myself on my next trip. Hoop Dee Doo Review gets decent reviews but the wife isn't as down home as I am.

I don't know how they do it at Disney but I know that places like Chili's tend to boil their ribs. I would imagine Disney broils or boils them, smoking would be far too time intensive I would think.

A lot of places/people will boil their ribs before smoking them as that makes the meat just fall off the bone when you eat them. However, you will lose a lot of flavor by doing this. Thus the use of a lot of sauce.
