Since park tickets are non-refundable...

If you have not used it, you can gift it to someone else. You can not gift it if it has been used by someone to access the park.
It hasn't been used. I just canceled a trip for September and found out the ticket was non-refundable. I really don't have anyone in my family who could use it. Could I gift it to someone here?

There is no reason for you not to keep the ticket if you plan on going sometime in the future:

1-Day Tickets
Your 1-day tickets are valid on [date] for single-day admission to one theme park. Tickets are nonrefundable.
After expiration date, the price paid for a wholly unused ticket can be applied to the purchase of a new ticket with an equal or higher price.

Changing Your Tickets
You can make changes to your tickets, including your ticket dates, prior to midnight ET of the day before your ticket’s first valid use date. After your first valid ticket date, you can use the app to add additional days to an eligible ticket or add ticket options. If you change ticket dates and you previously made FastPass+ selections, you will need to make new FastPass+ selections (if available) for any new dates you’ll be visiting the parks. There’s no change fee to modify, but an additional cost applies for dates with higher ticket prices. No refund or credit is given for changes from dates with higher prices to dates with lower prices. Tickets are nonrefundable, nontransferable and must be used by the same person on all days.

So if I buy a ticket package for me and my family in May, but we have to postpone to lets say January, I can just pay the difference of ticket costs and dont lose my tickets?

To clarify are you just buying tickets or booking a vacation package that includes resort and tickets?
Your wording was confusing since you said "ticket package".

Just buying tickets. There's a sale on tickets for Canadians until the 7th. I might go in May but I might have to postpone it. I don't mind paying the difference but I wouldn't want them to just go to waste.

Yes, I did it with a ticket my friend gave me. I have moved it once already to a future date and didn't have to pay a difference. If I move it again, I will have to as all the future dates show a price difference.
