Unless I'm sitting under an umbrella on a tropical beach, in a button up linen shirt and a pair of board shorts, I like my rum drinks to taste light and refreshing, as opposed to overly sweet and fruity. So, with that in mind, I think my favorite rum drink I've ever had in Disney was the no-longer-served (or even made on request) Ginger Mojito at the Victoria Falls lounge in the Animal Kingdom Lodge.
If I remember correctly, is was muddled lime, candied ginger and mint, topped with a mixture of dark rum, Canton ginger liqueur, and ginger beer. It was a magnificent drink. It's essentially a supercharged Dark and Stormy, but man was it good.
