You can book it online as soon as you are paid in full and your booking window opens. If you haven't sailed before, you can book 75 days before you sail. Look at your reservation online and it will tell you when your window opens.

If it says, for example, you can book November 11th, you can actually book at midnight on the 10th if you're paid in full. And with Remy you often do need to be online at midnight to get it!

Supposed to be there making appearances Monday-Saturday at 12:30, 1:40, 2:50 & 5:20pm. If you happen to be at Chefs at that time, then I guess you should see him. Oui.
I don't if people have said some days he's there, sometimes not.

It's also possible to make reservations onboard, usually on embarkation day, for Palo. Do they allow that for Remy as well?

Yes! You're absolutely right, Chuck, I should have said that as well. If you don't get it when your window opens, you can try to get one right when you board. Your Navigator will tell you where to go and check.
