Cheddar Breakfast Potatoes

[FONT=Trebuchet MS, Tahoma, Arial] Yield: 6 to 8 servings

Ingredients:
4 cups shredded Idaho potatoes
1 cup sour cream
2 cups shredded cheddar cheese
2 teaspoons salt
1 teaspoon freshly ground black pepper

1. Place shredded potatoes in mixing bowl.

2. Add sour cream, heavy cream, 1 cup of shredded cheddar cheese, and the salt and pepper. Mix gently until evenly mixed.

3. Place in greased casserole pan or baking dish and bake at 350 F for 35 minutes.

4. Top with remaining 1 cup of shredded cheddar cheese and return to over for additional 10 minutes, or until cheese is melted and starting to brown.

Eggplant Rollatini
Tony’s Town Square Restaurant -- Magic Kingdom


Yield: 2 servings

Rollatini Mix
1 tablespoon chopped garlic
2 tablespoon olive oil
2 cups ricotta cheese
1 cup shredded mozzarella cheese
½ cup Romano cheese
2 eggs
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh thyme
Salt and pepper, to taste

1. Cook garlic in olive oil until tender

2. Set aside and cool to room temperature

3. Mix all ingredients together and refrigerate in an airtight container overnight.

Rollatini
½ cup olive oil, approximately
12 slices of eggplant, ¼ inch think, sliced lengthwise
Salt and pepper, to taste
Rollatini Mix
2 cups favorite tomato sauce
1 cup shredded mozzarella cheese

1. Heat 2 tablespoons of oil in skillet over medium heat until hot but not smoking.

2. Add eggplant to over the bottom. Sprinkle lightly with more oil, and sauté until golden brown on both sides. Continue to sauté the eggplant slices, adding oil as necessary. Remove and place on paper towels to drain. Let eggplant cool.

3. Place eggplant on clean surface, overlapping two of the longer slices slightly with wide end next to the thin end. Season with salt and pepper.

4. Mound the Rollatini Mix at the widest end of each piece, roll into cylinder, and secure with a toothpick.

5. Place seam side down in a lightly oiled baking dish large enough to hold the eggplant in a single layer. Cover with aluminum foil and bake at 350 F, about 30 minutes, until heated through.

6. Warm tomato sauce.

7. Remove toothpicks, and place sauce on top of eggplant.

8. Cover with mozzarella cheese and place back in the oven until the cheese melts.

New England Pot Roast
Liberty Tree Tavern -- Magic Kingdom


Yield: 6 servings

Ingredients:
¼ cup vegetable oil
3 pounds boneless beef shoulder roast
½ cup (1 stick) butter
2 cups large diced carrots
2 cups large diced onion
¼ chopped garlic
2 tablespoons chopped fresh thyme
1 cup all-purpose flour
1 cup burgundy wine
6 cups beef broth

1. Preheat over to 350 F.

2. Heat ¼ cup in heavy pan, then brown the meat on all sides. Do not let it scorch.

3. Remove the meat and add butter. After butter has melted, add carrots, celery, onion, garlic and fresh thyme. Sauté until vegetables are tender. Stir in the flour, and continue cooking until flour is lightly browned.

4. Stir in burgundy wine and beef broth. Add the meat back into the pan.

5. Cover and bake for 40 minutes to 1 hour, or until meat if fork tender.

Mango Sorbet
Cinderella's Royal Table -- Magic Kingdom


Yield: 4 to 6 servings
(about 3 cups)

Ingredients:
4 large ripe mangoes, peeled, seeded and chopped
½ cup water
2 tablespoons light corn syrup
2 tablespoons sugar

1. Puree the mango in a blender or food processor—you should get about 3 cups.

2. In a bowl, stir together the mango, water, light corn syrup, and sugar until the mixture is smooth and the sugar has dissolved.

3. Chill the mixture, covered, about 2 hours, until cold.

4. Freeze in an ice-cream freezer according to the manufacturer’s directions. Store tightly packed and covered in the freezer compartment of refrigerator until ready to serve.

Please Note: When working with mangoes, wash the outsides well. Some people are sensitive to the skin. Wearing gloves, cut around the cling pit and remove the skin.

Chef Mickey's Roasted Garlic and Parmesan Mashed Potatoes
Chef Mickey's , The Contemporary Resort

Yield: 6 servings.

3 pounds whole potatoes (peeled and cut into 1/2-by-1/2-inch cubes)

2 cups half-and-half

4 tablespoons butter

3/4 cup grated Parmesan cheese

1/4 cup roasted garlic puree (see note)

1 tablespoon salt

1 teaspoon black pepper

1. Boil potatoes until soft and easy to mash. Drain potatoes and return to cooking pot.

2. Heat half-and-half in small pan and add to potatoes.

3. Begin mixing potatoes with a whisk or handheld mixer and add in the cheese, butter and garlic puree. Continue mixing until smooth and creamy.

4. Add the salt and pepper to the mix.

Roasted garlic puree: Heat oven to 350 F. Toss 1/3 cup whole peeled garlic in 1 tablespoon olive oil and spread out in a shallow baking pan. Place pan in oven and roast until the garlic is soft, 10 minutes. Remove pan and place roasted garlic in blender. Pulse garlic until it becomes rich and creamy. Remove from blender and reserve for mashed potato recipe. Makes 1/4 cup.

Peanut Butter and Jelly Pizza

Disney's Contemporary Resort
1/4 oz quick-rising yeast
1 1/2 teaspoon light brown sugar
2 cups bread flour, plus extra for kneading
1 teaspoon kosher salt
2 tablespoons olive oil
1 to 2 1/2 cups peanut butter
1 cup grape jelly
Clean squeeze bottle
Directions
In a large bowl combine the yeast, sugar and 1 cup of flour. Stir in 1 cup of warm water and let the mixture stand for 10 minutes. Add the salt, oil and a second cup of flour. Stir until dough pulls away from the side of the bowl. Turn dough onto a floured surface and knead 5 minutes, adding additional flour as necessary to keep the dough from sticking. Divide into 3 balls. Place the balls on the floured surface, cover with a dishtowel, let rest 10 to 15 minutes.
Preheat oven to 350 degrees. Flatten each dough ball into an 8 to 10 inch round with slight rim, formed by pinching the sides up. Place the rounds onto lightly oiled baking sheet and bake until golden brown, about 10 minutes.
Remove the pies from the oven and cover each with peanut butter. Put the jelly and 2 tablespoons of water into a clean squeeze bottle and shake until mixture is smooth. Start in the center of the pizza and move around and out toward the rim. Squeezing the jelly over the peanut butter in a swirl pattern. Drag a toothpick from the middle of the pie to the edges to create a flared effect shown above. Repeat on the other pies. Serve warm. Makes 3.

Broccoli Slaw
1900 Park Fare, Grand Floridian
Ingredients:
1 1/2 lb Broccoli florets
1/4 cup Cashew Halves
1/4 cup Cooked/diced Bacon
1/4 cup Red Onion- small, diced
1/4 cup Raisins
1 cup Mayonnaise
1 tbsp Sugar
dash Salt
1. Bring 2 quarts of water to a boil in a 4-quart pan.
2. Add Broccoli florets and cook for approximately 3 minutes or until barely tender. Cool thoroughly in ice water. Darin completely.
3. Cut bacon into small pieces and cook in sauté pan until crisp. Drain off excess grease and cool.
4. Add small red onion.
5. In a separate bowl, combine the diced red onion, raisins, mayonnaise, sugar, and cashews.
6. Add the thoroughly cooked broccoli and cooked bacon.
7. Season with salt and pepper.
8. Mix gently but thoroughly.
9. Refrigerate until served

2 cups Fresh Blueberries
1 1/2 cups Cream Cheese, whipped

Bring cream, milk, sugar, zest and salt just to a boil in a heavy sauce pan, stirring occasionally. Lightly beat yolks in a large bowl, then slowly add the hot sweetened cream to the yolks in a slow stream while whisking constantly. When tempered, add the custard back into the sauce pan and cook over a low heat until the temperature reaches 170 degrees and the custard coats the back of a spoon. Strain into a clean bowl and add lemon juice. Cool the custard, stirring occasionally, the chill until cold. Freeze custard in an ice cream maker according to unit directions.

How about those delicious Island Sunset drinks served at Ohanas? I am NOT a drinker but I can not get enough of those! I think I had about 10 over our last trip. I searched but didn't come up with anything....

POG Concentrate is Passion Fruit, Orange, Guava concentrate...its hard to find in some places, so I understand.


EDIT: there are many sites out there that have WDW/DL recipes. I usully just look thru my resources first, then Google what I can't find.

Remember, you can always call or email the restaurant and ask for the recipe or ask while you are there. They may not share, but many have the most requested recipes already printed up.
If you haven't wandered thru the entire thread please do so, there are many recipes and also some feedback from those who have given them a try.
