Keeping with the Pop Century theme..

DISNEY'S POP CENTURY RESORT'S TWINKIE TIRAMISU


Espresso Syrup


1/3 cup water
1/2 cup sugar
2/3 cup strong brewed espresso coffee
1/4 cup Italian or domestic brandy, optional

Combine water and sugar in a small saucepan. Bring to a simmer, stirring occasionally to dissolve sugar. Remove from heat, cool, and add coffee and optional brandy.


MASCARPONE FILLING


1 1/2 cups heavy whipping cream
1/3 cup sugar
2 teaspoons vanilla extract
1 pound mascarpone cheese, softened to room temperature


Whip cream with sugar and vanilla until soft peaks form. Fold cream into softened mascarpone.


ASSEMBLY


12 Twinkies, sliced 1/2-inch thick
Cocoa powder, lightly dust as garnish

Place a layer of the Twinkie slices in the bottom of a shallow 2-quart baking dish or gratin dish. Drizzle with half of the espresso syrup. Spread with half of the mascarpone filling. Repeat with remaining Twinkie, syrup, and filling. Smooth the top with a metal spatula. Cover with plastic wrap and refrigerate for up to 24 hours before serving.


Just before serving, sift cocoa to lightly dust the top of the tiramisu.


Makes 8 to 10 servings

Hope this hasn't already been posted...Also hope someone is interested...LOL

Spoodles' Spicy Vegetable Stew

1 bunch broccoli rabe, cleaned and blanched
(or 1 bunch broccoli florets)
1/2 lb. small red bliss potatoes, blanched and wedged
1 head garlic, roasted and halved
7 tbsp. olive oil
1 small eggplant, diced large
1/2 tsp. crushed red pepper flakes
1 tsp. kosher salt
1/4 tsp. ground black pepper
4 tbsp. dry white wine
1 1/2 cups canned Italian whole peeled tomatoes
3 1/2 oz. goat cheese, crumbled or sliced

Prepare vegetables as directed. (To roast garlic, place in small baking pan, drizzle with 1 tablespoon of olive oil, and bake for 1 hour at 350 degrees. To blanch, place broccoli in boiling water for 3 to 4 minutes and potatoes for 10 to 12 minutes. ) Set all aside. In a large sauté pan, heat the remaining olive oil over medium-high heat for 1 minute. Add the eggplant and cook until slightly browned, then add broccoli rabe, potatoes, garlic, red pepper flakes, salt and pepper. Sauté for 2 minutes, then add wine and cook for just 1 minute. Add tomatoes and cook a couple more minutes, until it is not too thin or watery. Serve in bowls, topped with goat cheese. Serves four.

Cassava Cake from Boma's

Cassava Cake
Boma at Disney's Animal Kingdom Lodge
Yield: 12 servings

Ingredients

1 pound Cassava, grated
6 ounces Sweetened, Shredded Coconut
14 ounces Sweetened Condensed Milk
2 ounces Butter
13 ½ ounces Coconut Milk


Directions


Combine all the ingredients in a bowl and mix by hand. Pour into a cake pan, sprayed and lined with paper.

Bake in a 350° oven for about 30 minutes or until golden brown.

Once cooled and set, cut into squares.

Milky Way Cake - Beaches & Cream

Milky Way Cake

from Beaches & Cream, Beach Club

6 regular-size Milky Way bars
4 eggs
½ teaspoon baking soda
2 sticks butter (or margarine)
2 cups sugar
1½ teaspoons vanilla
2½ cups flour
1 cup buttermilk

For the glaze-
1 bar German sweet chocolate
1 tablespoon butter
¼ cup water
1 cup confectioners' sugar
1/8 teaspoon salt
½ teaspoon vanilla

Over low heat, melt Milky Way bars and 1 stick butter. Set aside. Cream other stick of butter with sugar and eggs; mix well. Add flour, baking soda, buttermilk and vanilla; stir well. Add Milky Way mixture and beat with mixer until batter is all one color. Pour into greased and floured Bundt-style pan and bake at 350 degrees for 1 hour or until toothpick inserted comes out clean.

For the glaze-
In small saucepan, melt chocolate and butter with water. Combine sugar and salt and gradually stir in chocolate mixture. Add vanilla and spread on cake.


OK that's the last one i have for today. I don't know if anyone would like these but I had to contribute.

Still haven't found the one from mama Melrose's, but I'll check on it when I'm there in a couple of weeks. Here is one from the GF...

Tiramisu

Grand floridian



2 cups mascarpone cheese

3 tablesp. coffee liqueur

3 cups heavy cream

1 teaspoon instant coffee

1/4 cup powdered sugar

1 10 in sponge cake

1/2 teaspoon vanilla extract

1/4 cup cocoa powder



combine mascarpone cheese , cream, sugar vanilla, coffee liqueur and instant coffee in mixing bowl, and whip till stiff. Split sponge cake creating a top and bottom layer. Spread cream mixure on bottom layer and replace top half of cake, refrig for one hour. Just before serving dust top of cake with cocoa powder.

Heading down to WDW soon & we've been talking about places to eat & now I'm craving some "Disney food"...

FISH' N' CHIPS
Rose & Crown Pub & Dining Room
United Kingdom EPCOT Center


3 pounds white-flesh fish, boneless (cod, snapper, haddock, grouper)
1 cup lemon juice
1 tablespoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon white pepper
2 tablespoons vegetable seasoning
Batter (recipe follows)
Chips (French fries), fresh or frozen, cooked
Malt vinegar


Cut fish into fingers about 2 ounces each and place in a glass or
stainless steel pan. Mix lemon juice with Worcestershire sauce, salt,
pepper, and vegetable seasoning. Pour over fish and marinate in
refrigerator for 1 hour, turning every so often to coat fish.


Prepare batter.


Remove fish from marinade, drain, dip in batter and fry in hot oil for
about 5 minutes, turning to brown both sides, if necessary. Remove from
oil and drain on papertowels.


Serve with chips and malt vinegar.




BATTER:


3/4 cup cornstarch
2 2/3 cups flour
1 teaspoon salt
3 teaspoons sugar
1/8 teaspoon white pepper
1 3/4 cups water
2 egg yolks
1/3 cup flat beer
2 teaspoons baking powder


Mix cornstarch, flour, salt, sugar, and pepper.

In a separate bowl, beat water, egg yolks, and beer together with a
whisk and slowly add dry ingredients. Continue to mix with whisk until
mixture is smooth. Stir in baking powder. Makes enough batter to coat
3 pounds of fish.

How can you stay on your diet, posting all these recipes?

The Harry Ramsden recipe reminds me of the last time I ate there, at the Bristol branch – the day Attack of the Clones premiered. I went with a good friend of mine, Paul, and afterwards he challenged me to “The Harry Ramsden Challenge”

This consists of two large slabs of battered fish, chips (naturally), two side dishes – gotta’ go with the mushy peas, bread and butter and tea. If you finish it you get a desert and a certificate. Half way through the second fish I was stuffed. But a challenge is a challenge, no matter how much it hurts and I could not let Paul beat me.

I made it, and finished the desert. But I have never felt so stuffed in my life – and that includes Boma.

To top the evening off we were both staggering under the weight of too much food and had made it out side when I let fly with a double-barrelled belch from both ends. Sorry folks, but room had to be made somehow. Paul heard this and looked upon it as another challenge and let out the ultimate bottom burp:
Imagine a damp king size mattress tumbling down a long set of stone steps, skidding across a corrugated tin roof and landing on a giant asthmatic duck and you will still not do full justice to the aural sensation of Paul’s creation. To this day he swears he did not follow through, but I’m not sure.
And so you had two fully grown men hanging onto the outside supports of Harry Ramsdens Bristol branch at 11:00pm with their legs giving way from laughing too much. Two Peter Pans who just have not grown up.

I still feel full when I think about it now. Maybe one day I’ll go back. But not soon.

To answer your question..I'm posting the recipes, not eating them (all :lookaroun ). I always lose weight in WDW so I'm not worried about that part.
As far as your story goes......... :eek: :lol: You kill me! :kiss:

We were at Cinderella's breakfast June 5th, the french toast we had then was different than what we had during our 2002 visit. This time it was stuffed with blueberries. Still good, but wasn't what I was expecting. I am guessing that you substitute various types of cheese danish..ie, apple, blueberry, cherry, also it wasn't topped with anything but powdered sugar..no additional fruit etc. Still it was yummy and we are looking forward to our next visit!

I had no idea that this thread existed!

I've already copied down about a dozen of these and have every intention of trying them at the next available moment.

By the way, when I was on my last trip I had this great asaparagus soup at the California Grill. I was surprised at how tasty and mild it was. Unfortunately, I didn't think to ask for the recipe. Any insight?

This is my first time running across the thread and i just wanted to say i am thrilled to see these recipes! :D

does anyone have a recipe for the olive flat bread at jikos at AKL?

or maybe the baclava or shwarma (sp?) recipes from the tangarine cafe?
(morocco pavilion at epcot.)

those are my three favorites. :)

KALAMATA OLIVE FLATBREAD

Ingredients



3 ounces Kalamata olives, chopped
2 ounces Four Cheese Mix (Royalty)
1/2 ounce Boursin cheese, crumbled
1/16 ounce kosher salt
1/16 ounce fresh ground black pepper
1/8 ounce olive oil
1/8 ounce Micro Greens (Garden Gourmet)
1 recipe of Millet Dough (below)

Method:

1. Spread olive oil, salt and pepper on dough.

2. Sprinkle four-cheese mixture on top of dough. Sprinkle Kalamata olives and crumble Boursin cheese on tope of the olives.

3. Bake in 400º oven for about 10 minutes until crispy and flaky.

4. Garnish with micro greens.

Millet Flatbread Dough

Ingredients

1 1/2 pounds high gluten flour
1 1/2 pounds millet flour
1/3 cup hulled millet
1/2 teaspoon kosher salt
1/2 teaspoon baking powder
1/4 teaspoon sugar
1 1/2 pounds water
1 teaspoon yeast

Method:

1. In a mixing bowl, take the yeast and add to water, mix.

2. In another mixing bowl, add all dry ingredients and mix well.

3. Slowly incorporate yeast and water liquid into mix and mix well.

4. Let all rest in the bowl, covered and refrigerated.

5. Portion, let the dough rest a little longer and use it as you need.

6. Bake in 400º oven for about 10 minutes or until flaky and crispy.

Ooh, I have a request. Actually 2, they're both from Spoodles.
The first is an appetizer called "Mediterranean Dips" - hitipi, chermoula, and baba ghanoush. If anyone has their recipie for any (or all 3) that would be amazing.
The other is the Grilled Salmon with sweet onion risotto, red wine sauce, and crispy onions.
