If I leave a park for a nearby ADR, may I re-enter the same park if I don't have the park hopper option?

Also, for the first time, I'm visiting with an infant. Do I need to include her in the ADR's?

You can leave and go from the same park as many times as you want for that day. I don't do park hopper anymore, we will go in the morning and sometimes leave and come back in the evening.
If your infant is going to need a seat, I would include them if the table is going from 2 to 3 or 4 to 5. But if you were going to be at a 4 top anyway(there are 3 of you the. The infant) I don't think you need to include them

We always include under 3 for seating purposes. I have been told to do that in the past so we kept with it.

Fire code occupancy limitations are based on body count, not ages, so definitely include all family members!!

Yes because they are going to need to have the table space for the high chair. And as an aside… when they bring the high chair check it out for stability. When dining in the past at Disney I’ve seen some active infants that have jostled in the seat and almost tipped the seating back and fallen out.
