We plan on putting away a certain amount of money a month. Then going to Disneyworld in September. Do we have to have the whole amount before booking? Or can we book then pay when we plan on going? How far in advance do we need to book? I know your supposed to book resurants 180 days before then fast passes 60 days before so how should I do this?

it really depends on the type of package you're booking, if its just the room they generally only charge a deposit at point of perchase for the first night and the rest is charged at check in.

whether you book now or wait is completely dependent on your preference, it depends on if you really want a room at a certain hotel or youre willing to be flexible with dates and where you stay. i would usually wait until room discounts are posted for your time frame.

once you have your room and tickets booked, you should be able to make fast passes online at the 60 days out, you can either do this on the app or on disney's website.

I’m not sure if answers to all your questions, but I can tell you what I do know.
You can make dining reservations 180 days ahead of the reservation you want to make. If you have a resort stay booked you’ll be able to book reservations for the whole stay 180 days from the first day (I think up to 10 days). If not, it’s day by day.
For FP you need to have a resort stay and park tickets linked to your account to book 60 days out. If you don’t have a resort, but do have tickets (because you’re staying offsite) you can make FP 30 days out.

If booking a vacation package you have to pay #200 deposit at the time of booking and the rest needs to be paid off by 30 days prior to check in.
If you book room only you will pay for one night at the time of booking and the rest upon check in.

Anyone can book dining reservations at 180 days out.
The perk of having a resort reservation prior to the 180 day mark is that you will be able to book at 180 days out and up to 10 days into your vacation. If you do not book prior to the 180 days mark then you'll only be able to book dining one day at a time.

In order to book Fastpasses you'll need tickets linked to your My Disney Experience account.
Anyone with a linked ticket can book FP+ at 30 days prior one day at a time.
The perk of having a resort reservation is that you can do it at 60 days out and for the full stay.

Personally I've booked far in advance and within 30 days.
If you know your dates I'd book now unless you're hoping that a particular discount comes out.

As others have mentioned packages are a $200 deposit and then you can choose to make payments at your leisure as long as its paid off 30 days prior.

We usually book about 9 months in advance. Sometimes a little less. We just booked our August trip last weekend. How far to book in advance is up to you. The earlier you book the more time you have to pay it off for though.

I would book as soon as you know your travel dates. It requires a $200 deposit when you book it and then final payment is due 30 days before arrival. You can make payments any time you want as long as the final payment is made 30 days prior to your arrival date. You can plan your meals 180 days prior to your check-in date, and your fast passes 60 days in advance. Keep in mind, if you book now, and then a discount is released, as long as there is availability, you might be able to get that discount applied to your reservation.

So basically, if you can book now, go ahead! Then you have all that fun time to think about all the Disney fun you will have!
