Yeah, being from an area of great poutine I just assume curds when I talk about the cheese. Should never do that but just too automatic here. And it has to be curds.I agree it's about the gravy, but much better with cheese curds, yum! We live in halifax and love beaver tails as a treat on the waterfront in the summer or on the ski hill
