I agree it's about the gravy, but much better with cheese curds, yum! We live in halifax and love beaver tails as a treat on the waterfront in the summer or on the ski hill :)
Yeah, being from an area of great poutine I just assume curds when I talk about the cheese. Should never do that but just too automatic here. And it has to be curds.
