Plan out my days <please>

Arrive on Sunday, 10/25 to YC about 1:00 pm.
Leave on Saturday, 10/31 flight about 5:45 pm

7 day tickets, no park hopper. Kids aged 4, 4, 5, 7, 7 & 8.

Only constraint is MNSSHP on Tuesday, 10/27
Reservation dinners not that important.

tentative plan:

S-HS
M-MK
T-AK/MNSSHP
W-EP
T-MK
F-EP
S-HS

Since you're at YC, I would have lunch at Beaches & Cream, then take the ferry to Epcot.
Ride SSE, Soarin' LwtL & Nemo & dinner at Coral Reef or Garden Grill.
DHS doesn't have two days worth of attractions & IMO Epcot is less chaotic. I like to take it easy-ish the first day :)

Are you flying? If so, I wouldn't make any definite plans (promises to the kids) for arrival day. Sometimes things don't stay on schedule and there's nothing you can do about it. Being flexible on arrival day is always best in our experience especially when traveling with children.

You mention that dinner reservations aren't important to you but maybe consider making lunch reservations for most days. When our kids were the ages that yours are we found that on vacations it was important to do one sit down meal each day. Everyone ate better (healthier and more balanced) if we sat and looked at a menu rather than just grabbing counter service things all day long. Lunch worked best for sitting down to eat, mindful of proper behavior and table manners, because at breakfast time everyone would be too excited for the day to start to sit still and by dinner time they were beat and could be cranky.

agree about HS. But here is my dilemma:

Kids really want to do Jedi Training. Is is possible to sign up in the afternoon? Or will it be full?
You pretty much need to be at Rope Drop to have your children involved in Jedi training! Especially if all of them want to take part. There are only 12 spots per show... Good luck!

I would stick to Epcot on your first and last day since you can walk there or take the ferry. If you are into character meals, we loved the breakfast at Cape May Cafe at the Beach Club. Great character interaction.

One of the crowd calendars I checked shows the following for the best parks each day:
25 - MK or AK
26 - Anything but MK
27 - MK or AK
28 - DHS or EP
29 - Anything but EP
30 - HS or MK
31 - AK or MK

So ignoring things on arrival day, I would do this:
25 - Epcot as has been suggested since you are so close to it.
26 - Epcot again since you won't get as much done on day 1
27 - MK and stay for the party. No sense hopping if you don't have to.
28 - DHS
29 - AK
30 - MK
31 - Whatever you want to go to again. Our family loves Epcot, so that would be our pick. Odds are with those little ones, you would do MK.

I didn't take into account any EMH's.

Keep in mind that if you are using DME, then you will need to be back at your resort several hours before plane departure time. So maybe you will just want to stay at the resort the last day and use the pool/relax time instead of rushing off to a park just to leave in a couple of hours. It seems like a lot to do with that many kiddos.
