Take a drive to the Gulf side and go to Clearwater Beach or St. Pete Beach for a day. Beautiful white sand beaches and only about 1.5 hours away. A nice break from any parks. If you go to Clearwater Beach, have dinner at the Palm Pavilion(make sure to get an outside table). Yummy, Yummy!

Busch Gardens does have animals, but yes, the focus is very much on a stellar line up of coasters.

Islands of Adventure may not be a good bet depending on how serious the issue is with water in the face you mentioned about your daughter. The three water rides will get you soaked. There are also minor water effects on The Amazing Adventures of Spider-Man and Harry Potter and the Forbidden Journey. Even the spinner, One Fish, Two Fish, Red Fish, Blue Fish has water that could easily end up hitting a rider in the face.

It is going to be kind of hard to do much outside of Disney if you are not driving.

We need time for things to happen.
A couple o' suggestions if you're looking to do things outside of Disney.

First - Rent a car.
Second - Leave Disney for the second part of your trip.

We love going to universal, my daughter is a HP freak, but we almost make sure to be at Disney our last couple of days no matter. What...

Save the best for last...you know?

Have fun.

It's going to be tough without a rental car. We just got back from an early June trip and tried Lego Land with our 7yr old daughter and 9yrbold son. They both loved all the rides there. Sea World and Univesal are a taxi away, but Lego Land is about a 45min car ride. Also, if you do the Potter ride, make sure to check the height requirements. Have a great time!
