Most of my trips are solo. I've eaten at Brown Derby solo and enjoyed watching the other diners (and the food, of course!). Would never hesitate to eat solo at any restaurant on property, unless it was one of the family style all you can eat (LTT or Garden Grill), since I'd feel I had to eat all that food myself so it wouldn't go to waste. Just don't let the host/hostess sit you near the kitchen or another bad spot just because you're dining as one.
Raglan Road would be a great place - good food, great entertainment and if you sit at the bar, you will not be lacking interaction with fellow diners...some however might be a tad ****ed.....
ETA: And as a last resort, there's always a hotdog from Casey's..... yum
