Park reservations which park which day?

Going Wednesday August 25th arriving early in the day and leaving Monday August 30th later in the evening.
Staying at Poly with a 5 day park hopper ticket.

Pre-Covid I would have decided which park on which day by trying to go to AM EMH parks, avoiding MK on party days, not going to a park if I was going to an MK party that day, and if it worked out go to MK for PM EMH.

Its a whole new ballgame now with Early Park Entry seemingly replacing EMH whenever it starts and likely a limited run of MNSSHP if it happens at all.

I'd be going to the parks Wednesday-Sunday.

I was thinking MK on Wednesday afternoon but I'm not sure about the other 4 park days...
EPCOT Thursday?, HS Friday?, AK Saturday?, MK Sunday?
Does it really matter?
On the HS day I may park hop to EPCOT and on the AK day I'm definitely wanting to hop to MK.

Being unsure is very not like me when it comes to my Disney trips lol.

Youve been many times, there isnt much you havent done or seen before. And with park hoppers in place you have the option of moving around later in the day. So I'd say it isnt that critical. Starting and ending with MK is the way we do it. In between pick the ones youd most likely enjoy hitting the park that has your favorite attractions youll be targeting early.

It’s so hard to know. We’ve got an October trip booked and I leaned heavily into DHS (for the Star Wars people in our group) and MK (for the kiddos and kiddos at heart) assuming it would be easier to hop to epcot and AK. But we normally plan like you do. I figured better to have something set up. When/if they release Early-Half-Hour info or Party dates we can try to adjust. 🤷‍♀️

I have heard Epcot is the most crowded on the weekends.
If you can get HS on Saturday I have heard do that since for instance the week we are going EVERY day reservations are sold out for HS. So if HS is at capacity every day you might as well go on Saturday.
Anyway, this is what I have heard. Who knows and I am no expert

I ended up picking...
MK on Wednesday
HS on Thursday
EPCOT on Friday
AK on Saturday
MK on Sunday

I went with HS on Thursday since we will want to park hop to EPCOT in the afternoon and piece together dinner at Food and Wine booths and figure it may be a bit less crowded on Thursday evening vs Friday evening.
Then we figure if we start out at EPCOT on Friday we can piece together lunch at Food and Wine booths and it would be less crowded than the evening.

Okay I just had a thought...
Should I trade my AK reservation for a second HS reservation since HS has tended to hit capacity and since we only care about Dinosaur and EE at AK but would not be able to PH until 2pm?
