I'd recommend not watching the rest of the clip because the Pinocchio section is quite frankly, an abomination. :lookaroun

Having seen the show first hand, the Pinocchio part was the best.

I just got back from a trip to WDW, and the Timon in Festival of the Lion King over at Animal Kingdom has one of the articulated/animated heads. And, as I think was stated here before, the characters in the Castle stage show at Magic Kingdom all have the articulated/animated heads too.
