I've been trying to book a vacation for this week and it says that there is no availability!? This is normally one of the slower times of the year... am I missing something?

People have been making up for the trips they had cancelled on them during the park closures. Theres people looking to go to Disney after doing nothing for basically 2 years and Disneys always a prime destination. Your dates fits in the Christmas decorations and events too which is a big draw. And as mentioned above, the 50th is a big deal that people wanted to get in on and had been booking for some time. Disney has been heavily promoting it for a while now.
Are you enqiuring through a TA? They may have better luck finding something for you.

Booked a trip for that week yesterday for AS Movies. Not sure if we will be able to go, but have it booked if we want to. Letting our AP's expire at end of year but would like to get our money's worth out of them before then.

I just saw a few choices for that week, you can also change the start date and end date a little bit, then book it, then call Disney and have them shave the days to fit your trip
