Clearly they can't please everybody. I too like the idea of a secret, off-menu item, though I never would have thought that "grey stuff" would be a dessert. I was hoping for some kind of pâté amuse-bouche.
The initial release of information in 2012 had no mention of Grey Stuff and people went nuts. (see link below) Disney relented and let everyone in on what they were doing. Either they wanted to keep it secret or they overlooked the single most obvious menu item for the BoG menu. I tend to believe the secret angle.

Indeed--that's the rumor that I posted at the start of this thread. This seems to confirm it. $3.99 for just the mousse though? Pricey...Is it possible that it has recently been added to the menu for all to enjoy? Indeed. With the ubiquity of crème brùlée all over property, it seems impossible that Be Our Guest doesn't at least offer one of those.They really need a range of killer desserts at BoG, they are severely lacking currently.
