Sleepy hollow is for sure on the list since I did the cupcake thing last trip! I couldn't fit it in! We will have a car too so we will be able to travel pretty easily and get to see a couple of other resorts!

Before our trip in May 2011, we didn't really book that many ADRs. We ate at Le Cellier and 50s and that was it, each trip. It wasn't until I discovered WDWMagic and the wonderful dining thread that we started making ADRs. Some people like sit down meals, some people don't. It's all about personal preference. You are not weird by not wanting to do TS meals.

I'll be honest, just reading the title of your thread gets my eye twitching just a bit. I have nightmares about failed attempts of online ADRs days before my 180 days. That being said, we always go during Free Dining and have a fairly short list of our must-do favorites. If you are more free with your times, choices and mind-set, I say go for it and I'm almost jealous. I can't ever imagine a day I could be that adventureous but I admire you.

In 2010, as a party of 2 (1 adult, 1 child) on the Deluxe DDP, I had no trouble getting into any restaurants without ADRs outside of Le Cellier (which turned us down, repeatedly). I did make ADRs for Akershus and CRT for that trip, but that was it.
In 2011, I did much the same, and had a lot of trouble getting into any TS restaurants.
In 2012, I booked the heck out of ADRs, and I regret it. It seemed many days we were planning the day around the ADRs, instead of what we wished to do that day.
This year, I'm trying to keep ADRs to a minimum, but I fear that, after paying for the Deluxe DDP again, I'm going to get shut out of TS restaurants, even though the kid and I don't mind waiting for a table.
I don't like ADRs...but I feel forced into making them.

For those thinking TRex with ADRs, Landrys Select has priority seating outside of the Disney ADR system along with Yak & Yeti and RainForest. It costs $25 for a forever membership and when you join you are give $25 rewards credited to your account in I think 24 hours. It is a good backdoor way of getting in. It doesn't work for points though on WDW QS Landrys restaurants.

I've never had issues getting into a Landry's concept at DTD without ADRs. Sometimes there is a wait, the longest I can think of was 10 minutes...

Have only made 1 (that's right - ONE) ADR in four trips (totaling 37 days) and it was the worst meal/experience we've ever had while eating at WDW. I know pretty much everyone on here can't live without them. Heck, even my best friend who got me hooked on the whole WDW vacation thing initially won't go down there without them. My family is the exception I guess. We are more laid back when it comes to our vacation. We tend to sleep in until 9-10am, eat breakfast in our room while deciding which park we are going to hit that day, and then either eat at a QS place in the park we chose that day or go back to Pop and eat in the food court there. 
Think the longest wait we have had in 10 years was for rose and crown (about 20 mins).

It was the Rainforest Cafe on our last (4th) trip in 2011. I wouldn't say it "failed" me - we just weren't that impressed with it. When I walked up to the CM standing at the entrance to check in, he was pretty snippy with us and when I told him I had made an ADR, he was like, "Excuse me...what is an ADR??" Then he said he couldn't find it, even though I had a confirmation page printed out and on me. Took them between an hour to two hours to call our name for our table, which didn't really bother us because it was Spring Break and we could see that everything was busy. But then the meal itself was just okay, took forever to get and was extremely pricey for what we ordered. Again, nothing wrong with it if it is your thing.
At the end of the day, we are happy to just grab a quick bite to eat in the food court at Pop or at a QS place in whatever park we are in that day. Nothing wrong with wanting to have all ADR's for your trip if that is your thing, it just isn't ours. Would rather spend the time we spent waiting to get our meal in one of the parks on the rides or shopping in DTD.

T-Rex is really good about accepting walk ups, but if it's anything like the night we went...the walk up wait was 45 min. Not many people know that you can call T-Rex to make a reservation, so you can often make a ressie same day ... which not only saves you the wait, but still affords you some flexibility.

Realize that - and the kids were younger and dying to eat there, so I figured it was better to be safe than sorry and booked an ADR.
