I have recently seen on the Disneyworld website that they have the Disney dining cards, we live in Canada so paying debit all the time is a big currency difference. Has anyone done this and it been worth it?

Sounds like something similar to Disney Gift Cards, which I find to be very handy for using to pay for meals and snacks.
Disney Gift Cards can be purchased in advance online, at many retail stores, or once on Property.
During the Food n' Wine Festival event, the Gift Cards are often promoted as a easy means for purchasing dining options.
Perhaps this is the 'Dining Card' you are referring to?
They do make it easier to pay for meals while traveling 'the World'.

Are you referring to the QS Dine Card that's only available if you book a package at select non-Disney owned hotels?
