Regarding the trash system, it may seem odd, but compressed air is used for vacuum systems quite often -- it's something called the Venturi Effect. Similar to when driving down the highway and you open a window and all the trash in your car flies out the window.
When you have compressed air flowing quickly next to an open pipe, it creates a vacuum in the pipe. I don't know if Disney uses that for the trash system, but if they already have a compressed air system in place, it makes sense.
