My question is can I take it one way? I am driving down there and leaving my girlfriends car with her, she is going to be a cast member, but I dont want to have her drive me to the airport. So I do I go about booking it for a one way?

yes, you can book it one way, but you must be staying at a Disney Resort to be able to use the service.
