Do the movies under the stars change out regularly? I've only been able to find one schedule for then and it's from a couple years ago.

Yes they change monthly.

Here is May.

Sunday - Remember the Titans
Monday - Wall-E
Tuesday - Peter Pan
Wednesday - The Hunchback of Notre Dame
Thursday - Bolt
Friday - Cars
Saturday - Frozen

On a related note, I don't think WDW does this, but you know the "newsletter" that they give you along with your check-in information so you know what sorts of regular and unique-for-that-week amenities will be offered for any given week? From the usual boat or bike rentals to the movies being screened "under the stars?" I'd love for that to be available online; it may influence me to modify my schedule in advance if I know what's available to us.

Always check to see what's playing at neighboring resorts. They will all be different. It gives you a great chance to explore different resorts.

Is there somewhere good to go online and get this information? I've been trying to find the nightly movie information for the first week of June at the Pop with no luck.

Go to buildabettermousetrip.com. They will list movies for all resorts and fort wilderness. But they only list the current month. You will have to wait until it is closer to June to get that month.
