My wife always picks out a piece of Mickey costume jewelry that doesn't scream "Mickey or WDW" but something that when people look at it long enough, it hits them that it has a Mickey head (sort of like "hidden Mickey jewelry). I love to take pictures of the not so obvious photo ops. Maybe he could pick out a selection of his favorite photos from your trip and go to Walmart and put together his own "memory book". I bought them there for around $20 for 20 pages.

I'm an obsessive collector of the various Disney Ducks, (Donald, Daisy, Scrooge McDuck etc.) and I always try to find something (other than pins) with the Duckburg gang. This may not sound very interesting until you realize just how difficult it is to find anything of quality with Donald Duck at WDW. It's easy to find Mickey merchandise throughout all of WDW (as well as, WalMart, KMart and Walgreens) but poor Donald is more and more rare with each visit. Some of the few things available are often at the high end shops with prices well into the hundreds or more. If you're looking for a challenge, try collecting character merchandise other than Mickey, Tinkerbell, Cars, Grumpy and various princesses.

aside from the ideas previously mentioned, which are awesome and I do as well, I collect park maps. They're free :D, the picture on the front changes with most trips I've ever been on, and of course with all the changes to the parks throughout the years it's a nice reminder of how things used to be. In order to keep them straight, I just write the month and year of my trip on the front. You can keep the ones you've used on the trip to remind yourselves what you did (if you're like me, you check things off on the map as you go) and you can get pristine ones. Hope this helps! One odd ball thing I collect is towels. You can get ones with characters, dates, and parks. The other things I collect are pins and pressed pennys.
