Lunch Vs. Dinner?

At the Table service resteraunts I noticed that almost all of them have a better menu at lunch then at dinner. More to choose from. Why is that? You would think it would be the other way around.

It's pretty typical for a lot of nicer restaurants anywhere to have an abbreviated lunch menu and a full menu for dinner. Even chain restaurants do it like Olive Garden.

I know that. That is how it usually is but not at Disney, the lunch menus are bigger and not much to choose from at dinner time, I was wondering why? It is very unfortunate IMHO. For people like us who go hard all day barely stopping for lunch then take time out for dinner to sit and relax and enjoy some down time. Oh well just wondered if there was a particular reason why Disney does this.
