Lunch and Dinner Times

I am working on making PSs for my upcoming trip to WDW, and I was wondering, when do the restaurants switch from lunch to dinner menus. The one that I am looking at specifically is Le Cellier Steakhouse in Canada at EPCOT. Also, I know that Chef Mickey's starts serving dinner at 5:00, and I already have a PS for that. What are some experiences for both of these places, and again, when does the lunch menu change to dinner?

most lunch goes up to 3:00 pm but it varys by restaurant. last year we did mostly luch and they all had lunch till 3:00 but those were the restaurants we went too.

The only one that I am concerned about is LeCellier.
