You are picking a very nice time for your WDW visit. Crowds will be fairly low (weekends a little higher) but you will have easy access to everything. The food and wine festival is starting at Epcot, so plan on visiting that and enjoying.
If you're not that familiar with WDW, I would suggest you pick up one of the tour books and study a little before hand. There is a lot to take in and planning does help you enjoy your stay. Also, another website, allearsnet.com is a very good resource for up to date information and especially restaurant listings and menu's. From that site is the following update on closings status:

Animal Kingdom
Pocahontas and her Forest Friends will be closed September 7 - 11, 2004
Festival of the Lion King will be closed September 16-18, 2004
The Boneyard will be close September 20 - October 14, 2004
Epcot
The Wonders of Life Pavilion in Epcot will operate on a greatly reduced schedule beginning January 5, 2004. Body Wars, Cranium Command and the Making of Me will be available during periods of peak attendance. The quick service dining and merchandise locations in the pavilion will cease operations.
Magic Kingdom
Ariel's Grotto will be closed from September 13 through November 11, 2004
Liberty Square Riverboat will be closed September 5th through September 18, 2004
The Magic Carpets of Aladdin - will be closed for rehab from September 13 - October 15, 2004
The Jungle Cruise will be closed August 22 - September 5, 2004.
Tom Sawyer Island will be closed July 25 through September 25, 2004.
It's a Small World is closed May 2, 2004 and reopen spring 2005 for a rehab of the characters and sound.
ExtraTERRORestrial Alien Encounter is closed and will reopen fall 2004 as Stitch's Great Escape!
Carousel of Progress is open while Alien Encounter is being renovated.
Disney-MGM Studios
The Magic of Disney Animation will be closed for rehab September 13 through September 24.
Boardwalk Villas
A major pipe replacement project is underway through the summer of 2005. No work is scheduled inside guest rooms, but there may be some noise on the 2nd and 3rd floors between the hours of 9:00am and 5:00pm Monday through Friday.
Old Key West
Construction on the new themed pool will begin September 6th and last approximately 8-10 weeks. During construction of the slide, the main pool, kiddie pool and main spa will be closed.
