I'm craving rice cream

I recently got back from WDW....We tried the rice cream at Kringla Bakeri Og Kafe in Norway for the first time....It was amazing....I remember a few years ago Disney Magazine (I still miss it!!!:cry: ) had the recipe for it but I can't find my issue that has it...Does anyone have a copy of that recipe? I would really appreciate it!!!!!:kiss:

Help me out with a ballpark of what issue had the recipe; year, front of cover, etc... Is there anything you remember? I have a bunch of old issues and I'd be willing to find it. If you can't remember any details about when the recipe was printed, I'll skim through my mags over the weekend and post my findings at that time.

mmmmm ...rice cream....only 80 more days til we arrive....I will probably have to make that recipe just a few times before our trip. Somehow it always tastes better at Epcot!
 
OK, I found the recipe. It was in the Spring 2004 issue of Disney magazine along with some other delicious recipes. It's listed as "Rice Cream, Restaurant Akerhus, Epcot". Here goes:

1/4 teaspoon salt

1 cup short-grain white rice ("sushi rice")

2 cups milk

1 10-ounce package frozen sweetened strawberries, thawed

1/2 teaspoon fresh lemon juice

1 cup heavy cream

1/4 cup sugar

1 teaspoon vanilla extract

Fresh strawberries, coarsely chopped

In a saucepan, bring 1 1/2 cups of water to a boil with the salt. Add rice, reduce heat to medium low, and cook uncovered for 10 to 15 minutes, or until all the water has been absorbed. Add the milk, increase heat to return to a simmer, then reduce to medium low and cook for 20 minutes, or until milk has been absorbed. Transfer to a large bowl and let cool to room temperature, stirring occasionally.
In a blender, puree thawed strawberries and lemon juice until smooth.
Whip cream with sugar and vanilla until it forms soft peaks. With a rubber spatula, fold the whipped-cream mixture into the rice. Drizzle each individual serving with strawberry mixture and top with fresh strawberries. Serves 4 to 6.
