Does anyone know how Disney pulls off the little sparkling things on top of the water? First they are white right after chaos, when the globe first comes out, then during We go On they are gold/orange. And during the holiday ending they are firework fountain type things. How do these work? Are they launched from the maxi barges?

They are floating flares, they have used them for years. I think they sit on buoys but some say they are released off the barges and float on the water, I don't see how thats possible because then how are they activated.

Yep as Martin says, they are fired off from the barges. Watch closely and you will see them fly out of the barges into the lagoon. Very cool.
