If they were to build a Mos Eisley Cantina at MGM, what should it serve?

Maybe the Star Wars restaurant can have different themes. Like a food court, SW style. One serves you TaunTaun ('and I thought they smelled bad uncooked') and Wampa Fingers from Hoth. Another fish specialty a la Gunga City. Fatty burgers from Coruscant. Fried lizard and other specialties from Jabba's cook.

So take the Simpsons approach rather than Harry Potter?
Possible, but the one Cantina restaurant is so iconic. Of course, if they were to build it full scale and have some sort of live/animatronic Chuck-e-Cheese style band, I anticipate demand and crowd levels would make the place resemble Starlight Ray's during lunch rush.

After all, other than Pizza Planet every other counter service restaurant at MGM has little to no appeal to kids.

I am not so sure it would be TS. Or maybe they use the BOG model and do QS for lunch, possibly breakfast, and a TS at dinner. And I see the usual burgers, fries, chicken etc...

I would be happy if they use a Sonny Eclipse approach. They have the er, Cantina Band playing like in the movies as people sit and eat.

Several of you have great names, especially womp rat burger (but would disney really want to put rat on the menu? Lol), but does it make the food unique?

I think curry and tofu dishes could make unique dishes. Cocktails are super easy and they already sell those sometimes. They also had an awesome darth vader cupcake this year.
