If they were to build a Mos Eisley Cantina at MGM, what should it serve?

A lot of people have speculated that Disney might build a themed Mos Eisley Cantina at the Studios, following the recent trend of themed "other-world" restaurants like Three Broomsticks, Cletus' Chicken Shack, and the Cozy Cone Motel.

The Cantina presents an interesting question, however: should Disney attempt to run a restaurant that serves "alien" food? The sales from "car" food, not to mention Butterbeer shows that theme parks guests certainly seem to be receptive to the idea of food carrying on the fantasy theme of the area they're served in, so perhaps there would be a real market here.

What kind of food items would be suitable for serving to predominately American or British guests as "alien" food? Should the menu borrow from world cuisine or just add blue food coloring to chicken fingers and fries?

I think that, if the Cantina happens, how far they take the menu theming will depend on what kind of eatery it is. If it's counter service, they may slap some cutesy names on regular theme park junk food and maybe serve some kind of blue milk in a souvenir cup. I'm hoping that it's actually more of a pub-style place, though, in which case I think the menu could nose in to more adventurous territory. It would be nice if it were similar to the newer drinks-and-tapas bars that Epcot is all about right now. I still don't think the food would be "alien", but they could definitely go for some ethnic influence. I also think a sushi bar could possibly work.

But, as I've said before, I'm still holding out for an Ink and Paint Club or a Rick's Café Américain in Hollywood Studios.

Drinks that look like they came straight out of the movie (adult and non-alcoholic) and "bar food" also with a Star Wars theme.

Well since Mos Eisley was in Tunisia, Tunisian cooking would make a lot of sense. No is Tunisian food anything like Moroccan food, full of flavor, not too spicy?

Where is this MGM place you speak of?

As we all know making food blue only works in the movies.
I agree with @The Empress Lilly - i think a fusion of mediterranean or middle eastern foods might be the way to go. It goes with the vibe of Tatooine anyway and most middle eastern food is "alien" to visitors in WDW.

I am a HUGE Star wars fan and this would be a dream come true for me!!

First of all There would have to be a Pub/bar area complete with the Figirin Da'n Band playing that cool Catina song!!

Darth Vader taters!!
Boba Fettuccine!!
Wookie Cookies... ( all part of the star wars cook book)

Akbars Snackbars,
Mos Isley Ice cream,
No Droids allowed area!!

I could go on all night.....
